A week or so ago, I visited Swift’s Attic in Austin, a buzzing restaurant that recently opened on Congress St. above The Elephant Room. This time, I had two missions under my belt for Serious Eats: to taste every cocktail on the bar menu, and to sample their most popular dishes.

The Reunited Cocktail: Texas peaches. OG Brandy, Cointreau, fresh sage
By the end of the photoshoot, the global fare stretched across the entire long table. They ranged from pork belly “Banh Minis”, a housemade kimchi tasting, to my favourite, a diver scallop tiradito. Fortunately, my trusty assistant was there to help me polish off the diverse dishes.

The playful dessert below tugged at my heartstrings. Here, PB&J was all grown up – deconstructed and accompanied by velvety foie gras mousse cylinders.
