Keller’s New Book: Ad Hoc at Home

Posted by on Jun 16, 2009

I learned about Thomas Keller’s next publishing venture thanks to Gayle‘s tip. His new theme is no-fuss family cooking in the highly-anticipated Ad Hoc at Home: Family-Style Recipes.

If you follow my journey of cooking through Bouchon, you will quickly realize how precise and elaborate the recipes can be, which doesn’t even match French Laundry Cookbook‘s complexity. I sometimes question the practicality and necessity of his intricate methods e.g. my lentil soup verdict. Many have commented on being too intimidated to even try cooking his recipes even though they own the book. Keller answers to this query by directing his new book towards “family meals and everyday staples, delicious approachable food, recipes that are doable at home. No immersion circulator required. No complicated garnishes.” He promises. Source

I must cop this when it comes out in November! My birthday is on November 21st. Coincidence? I think not!

In the defense of TFL, Keller does state right off the bat that the cook book ain’t your mothers cookbook and that there is a level of difficulty.

No need for a defense :) I love and own both TFL and Bouchon. If cooking thru Bouchon wasn’t challenging, it wouldn’t be blog-worthy or interesting to read. I’m just excited about Ad Hoc’s refreshing premise and seeing another side of Keller. Can’t wait!
